Lula’s Dancin’ Chicken

This is a fullproff vertically roasted beer can chicken with tons of flavor.  This is a dish that can be carved table side and served as entree or used as a star ingredient in chicken salad.

Ingredients

  • Basil
  • Rosemary
  • Oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1 tablespoon Olive Oil
  • 1 (3 pound) whole chicken

Directions

  1. Chop Basil, Rosemary, Oregano, and mix with olive oil, salt and pepper.
  2. Rub the mixture under the skin of the chicken. Put olive oil on the skin of the chicken.
  3. Place the chicken in a smoker at 225 degrees F until the internal tempurature is 165 degrees F.

Baby Back Ribs

Baby Back Ribs

Ingredients

  • Rib Rub
  • pork baby back ribs
  • Brown sugar

Directions

  1. remove membrane from the back of ribs.
  2. liberally coat both sides of ribs with rub and let sit for 2 hours.
  3. place ribs on smoker at 225 degrees F for 4 hours or until ribs are tender and internal temperature is  160 degrees F
